In a glass dish bake 1 bag of Trader Joe’s cut butternut squash, 1 whole red onion sliced, and one red pepper sliced. Drizzle with olive oil and Trader Joe’s everything but the bagel spice. Drizzle with garlic/onion powder. A little sea salt and cracked pepper. Then toss. Cooking in glass dish gives food a different taste. Better then stainless pan. Roast for 40 minutes at 325. Roasting always involves stirring. I did not stir once because they were in a glass dish and it helps the squash caramelize. Just do not crowd the dish. Then top on arugula or spinach. About 1 cup greens to 1/2 cup squash. 1 tablespoon of fresh parm, yes I grate my own! I actually prefer Asiago over parm...just saying. Then I top with fresh green onions. One dressing I love is garlic expressions. One tablespoon of this over the salad and a half of avocado. Makes for an awesome salad.
